RECIPE:-
For watermelon rind paste
1 cup watermelon rind chopped
4-5 garlic cloves
1 inch ginger chopped
1 green chilli chopped
2-3 small pieces of coconut, brown part removed
For tempering
1 tsp oil
1/2 tsp mustard seeds
1-2 whole red chillies, broken
A few curry leaves
Pinch of hing
Method:-
Add all the ingredients for the watermelon rind paste to a blender and blend till smooth.
Prepare a tempering as shown in the video.
In a big mixing bowl add multimillet flour, onion, watermelon rind paste, salt, cumin seeds, red chilli powder, black pepper powder and coriander leaves. Pour tempering over the batter.
Mix well, add water to adjust the consistency. The batter needs to be thick not flowing consistency.
The batter is ready to be poured in the appe pan. Cook appe from both sides till they turn crispy.
Serve with coconut chutney and enjoyyy.
