Thekua is a traditional cookie from Indian states of Bihar and Jharkand. It is prepared during Chhath Puja, a festival dedicated to the surya devta . These are whole wheat cookies prepared using Wheatflour , Melted jaggery / sugar, Ghee, cardamom as main ingredients. A special wooden cookie mold is used to prepare various designs on the thekua.
✨Note - here I used Multi Millet Flour instead of wheat flour.


Ingredients:-

  • Multi Millet flour - 3/4 cup Nutty Yogi
  • Bombay rava - 1.5 tbsp
  • Fennel seeds - 1/8 tsp
  • Grated dry coconut - 1 tsp
  • Jaggery powder - 2 tbsp ( as per taste) Nutty Yogi
  • Water
  • Ghee - 1 tbsp Nutty Yogi
  • Cardamom powder - 1/8 tsp
  • Pinch of salt
  • Ghee / oil for deep frying

Method:-
  • In a pan add jaggery, 1 tbsp water. Slightly heat and melt jaggery. Switch off the flame.
  • Add rava, mix well and allow it to completely cool down.
  • In a bowl combine millet flour, fennel seeds, cardamom powder, salt. Mix well.
  • Add hot ghee , crumble and mix.
  • Add jaggery & rava mix, water ( 4 tbsp) gradually, prepare stiff dough.
  • Take small portion of dough and Press ,
  • Make patterns on the pressed dough using a fork or a toothpick .
  • Cover remaining dough to prevent it from getting dry.
  • Heat ghee / oil & deep-fry
