This stew is prepared during onam / Christmas & served along with appam. Perfect warm bowl for the monsoon days.

RECIPE:-

  • In a pan heat 2 tsp oil, add Clove - 2,
  • Small Star anise - 1, Black Pepper corns - 4, small piece bae leaf, Small piece cinnamon stick , Cardamom - 1
  • 1/2 inch ginger ,Finely chopped garlic cloves - 1tsp ,Green chilly - 1( adjust as per taste)
  • Saute on low flame till raw smell goes.
  • Add 1 Sliced onion , green chilly, saute on low flame till onions turn translucent, add few curry leaves, mixed veggies ( 1/2 cup potato, 1/2 cup carrot, 1/4 cup beans, 1tbsp green peas, mix well .
  • Saute on low flame for 3 minutes.
  • Note - ( soak 1 tbsp Green peas over night)
  • Add diluted coconut milk( 1/2 tbsp coconut milk+ 3/4 cup water)
  • Add salt as per taste.
  • Transfer it to a pressure cooker.
  • Cook on medium flame for 2 to 3 whistles.
  • When veggies gets completely cooked, add 1/8 tsp crushed pepper, 1/8 tsp garam masala ( optional), thick coconut milk - 1/4 cup + 3 tbsp, adjust salt as per taste.
  • Mash 3 pieces of boiled potato and add it to gravy ( gravy slightly thickens later).
  • Flame must be very low while adding coconut milk, switch off the flame when it starts to boil.
  • No need to boil it.
  • Add tempering In a pan heat 1 tbsp ghee, fry 2 sliced shallots, raisins, cashew nuts, few curry leaves seperatly.
  • Add this thadka to curry.
  • Cover and rest it for 20 minutes.
  • Serve warm stew with dosa, appam, bread.
