Taking inspiration from the famous "Mango Sticky Rice", here we have created this dish- LAYERS OF "COCONUT" with "MANGO RASAYANA" - vegan & gluten-free, this is actually an easy recipe
RECIPE:-
Ingredients (serving for one)
(For Rasayana)
Mango Pulp - 1/3cup
Coconut Milk - 1/4cup
Coconut Sugar - 2tbsp
Cardamom Powder - 1/2tsp
(For the stuffing)
Mango Pulp - 4tbsp
Coconut Flour - 8tbsp (For the dough)
Boiling water - 1/4cup
Coconut Milk - 1/4cup
Rice Flour - 1cup almost
(For the caramel crust)
Coconut Sugar - 1tsp (per bite)
Instructions:-
To make the mango rasayana, mix all the ingredients & keep it aside.
For the stuffing, mix the 2 ingredients & make small balls out of it, keep it aside.
For the dough, take boiling hot water, add the coconut milk.
Now add the rice flour. Keep mixing it with a spatula to form a soft dough, soft just to roll it out & shape it. Make sure the rice flour is cooked.
Next, take a portion, roll it, add the mango coconut filling, fold & roll it again.
Cut it in an even circle shape.
Sprinkle coconut sugar, press it a little.
Heat a pan & cook it with some coconut oil.
Serve with the mango rasayana.
