Taking inspiration from the famous "Mango Sticky Rice", here we have created this dish- LAYERS OF "COCONUT" with "MANGO RASAYANA" - vegan & gluten-free, this is actually an easy recipe


Ingredients (serving for one)

(For Rasayana)

  • Mango Pulp - 1/3cup
  • Coconut Milk - 1/4cup
  • Coconut Sugar - 2tbsp
  • Cardamom Powder - 1/2tsp

(For the stuffing)

  • Mango Pulp - 4tbsp
  • Coconut Flour - 8tbsp (For the dough)
  • Boiling water - 1/4cup
  • Coconut Milk - 1/4cup
  • Rice Flour - 1cup almost

(For the caramel crust)

  • Coconut Sugar - 1tsp (per bite)


  • To make the mango rasayana, mix all the ingredients & keep it aside.
  • For the stuffing, mix the 2 ingredients & make small balls out of it, keep it aside.
  • For the dough, take boiling hot water, add the coconut milk.
  • Now add the rice flour. Keep mixing it with a spatula to form a soft dough, soft just to roll it out & shape it. Make sure the rice flour is cooked.
  • Next, take a portion, roll it, add the mango coconut filling, fold & roll it again.
  • Cut it in an even circle shape.
  • Sprinkle coconut sugar, press it a little.
  • Heat a pan & cook it with some coconut oil.
  • Serve with the mango rasayana.
