Che Choi is a warm, Vietnamese pudding-like dessert prepared using bananas and rich coconut cream, tapioca pearls. You can easily make this at home within 30 minutes!

RECIPE:-

  • Wash 1.5 tbsp tapioca pearls twice and soak it in 1.5 tbsp water overnight.
  • Peel and cut bananas then marinate (20 minutes) it in 1/2 tbsp coconut sugar to sweeten them. 1/2 cup Nendran bananas are here.
  • In a pan add 1/2 cup + 3.5 tbsp water. Add small piece of pandan leaf for flavouring (or a pinch of cardamom for flavouring) Allow it to boil.
  • Add soaked tapioca pearls, pinch of salt, 1 tbsp coconut milk.
  • After 5 minutes add marinated banana. Don't use over ripened bananas. They turn mushy.
  • Cook banana till they turn soft and tapioca pearls turn transparent.
  • Add 1/4 cup thick & creamy coconut milk ( low flame), 1 tbsp coconut sugar, mix well.
  • Sprinkle Roasted & crushed peanut, roasted sesame seeds, pinch of coconut flour ( optional) on top .
  • Serve warm.
