RECIPE:-

For watermelon rind paste

  • 1 cup watermelon rind chopped
  • 4-5 garlic cloves
  • 1 inch ginger chopped
  • 1 green chilli chopped
  • 2-3 small pieces of coconut, brown part removed

For tempering

  • 1 tsp oil
  • 1/2 tsp mustard seeds
  • 1-2 whole red chillies, broken
  • A few curry leaves
  • Pinch of hing
Method:-
  • Add all the ingredients for the watermelon rind paste to a blender and blend till smooth.
  • Prepare a tempering as shown in the video. 
  • In a big mixing bowl add multimillet flour, onion, watermelon rind paste, salt, cumin seeds, red chilli powder, black pepper powder and coriander leaves. Pour tempering over the batter. 
  • Mix well, add water to adjust the consistency. The batter needs to be thick not flowing consistency.
  • The batter is ready to be poured in the appe pan. Cook appe from both sides till they turn crispy.
  • Serve with coconut chutney and enjoyyy.
